Fruit Cake recipe

Ingredients:

Ghee - 1/2kg
Powdered Sugar - 1kg
Madai flour - 1kg
Baking powder - 3 pinch
Egg white- 1
Vanilla essence - 3 tsp
Salt - a pinch
Grapes (seed less) - 200gm
Grapes (with seed) - 200gm
Cherries - 175 gm
Cashew nuts - 150 gm
Dates - 200gm
Brandy - 2 small glass

Method:

Cut the grapes, cherries and dates to small pieces and soak the pieces in brandy one week before preparing the cake.
Heat a pan and add 1/2 of the powdered sugar and dissove it and keep aside. Allow it to cool.
In a bowl add the madai and baking powder , salt together and the fruits soaked in brandy , chop the cashew nuts and add the chopped cashew nuts to the bowl. Combain well.
In another bowl add the ghee and remaining powdered sugar. Beat the egg white and add it little by little to the ghee mixture. Add the dissolved sugar, Vanilla essence and combine well.
Take a baking vessel, apply ghee completely add the madai-fruit mixture first then add the ghee-sugar mixture , repete alternately.
Now bake the cake in a microwave oven (160 C) till done. About 35 to 40 minutes.
Fruit Cake is ready to eat.
