Lady's finger Mutton Curry
Ingredients:
Lady's finger - 200 gms
Mutton - 300 gms
Onions chopped - 2
Tomatoes chopped - 2
Ginger garlic paste - 2 tsp
Turmeric powder - a pinch
Chilli powder - 2 tsp
Coriander Powder - 3 tsp
Coconut paste - 1/2 cup
Tamarind extract - 1/4 cup
Oil
Salt
Coriander leaves
Method:
- In a pan, heat oil and fry the lady's finger and keep it aside.
- In the same pan, remove excess oil and fry the chopped onions and ginger-garlic paste.
- Fry the onions until it turns light golden brown.
- Now add the mutton pieces and cook well for another ten mins.
- Now add the turmeric powder, salt, chilli powder, coriander powder and cook well for another 5 mins.
- Now add the chopped tomatoes and 1 cup of water, close the lid and allow it to cook for atlease 15 mins, the mutton must be completely cooked.
- Add the fried Lady's finger and combine well.
- Finally add the tamarind extract and coconut paste, combine well and cook for 10 - 15 mins.
- Once the curry gets thicker, remove it from heat by adding coriander leaves.
- Hot Lady's finger Mutton Curry is ready to eat now.
